Deep in the heart of Southern Italy, where fresh vegetables and seafood are revered, Cavatelli is a faithful companion. Often called 'Orecchie di Prete' (priest's ears) these rounded, ridged curves roll into a hollow shape built to hold thicker sauces alongside chunky, seasonal vegetables. Pair with rucola (arugula) and ricotta or sautéed garlic and broccoli. Organic grains grown on north American farms. Milled with care in the United States. Bronze die extruded and slow dried. Chef-crafted and packaged in new York’s Hudson valley.

Organic Durum Semolina Flour, Water.

Directions

Cook time 10 minutes. Check at 10 min and serve to your taste. Cooking instructions: in a large pot, heat four quarts of salted water and bring to a boil. Add the pasta and stir. Cook for ten minutes, stirring occasionally and then strain. Reserve two to three tablespoons of pasta water to add to your sauce.
